Momma Bean’s Cluckin’ Good Brine
Ever wondered how to make your homemade chicken street food standard juicy? Well, we did and we asked Momma Bean, co-founder of Mother Clucker, for her secret. As a N’Orleans native and the owner of Buzzfeed’s Best Fried Chicken in London, we consider her something of an authority on the matter. With this simple brine recipe you’ll be serving up top-notch southern-style chicken quicker than you can say ‘get clucked!’.
“There’s only three ingredients you need to make this amazing brine: Water, Salt and Brown Sugar.
Take three cups of water, ¼ cup of salt and ¼ cup of sugar and mix them together until everything has dissolved into a smooth mixture. You’re gonna want to store this mixture in the refrigerator until it’s nice and chilled. At that point, simply add chicken, pork or turkey and stick it back in the fridge!
It’s gonna need 8-12 hours of cooling, but if you take 5-10 minutes to prepare it all in the morning before work you’ll have a perfect brine by the time you get home! It’s actually very little effort, but the reward is the best chicken you’ve ever made!”
Mother Clucker were named Best Fried Chicken in London by Buzzfeed in 2015 and will be serving up their grubs at Red Rooster this summer!
